Made with freshly milked goat’s milk.
Without any milk heating process. At the same temperature at which the freshly milked milk arrives (31-32 degrees), the cheese making process begins.
Minimum cure of 3 months.
It is a cheese with a medium intensity and it is highly recommended to eat it with its rind, which is totally natural.
